string(949) "Guillaume Aurele Pinot Noir Pays D'OC.The growers in the well-run Alma Cersius cooperative collectively own 1,200 hectares of vineyards spread across three villages to the south-east of the city of Béziers. Part of the terroir is based on a warmer, free-draining stonier soil, while other sites are situated nearer the coast on alluvial soils, creating a cooler growing environment. These different conditions enable them to produce a good range of high quality varietals.
The grapes are macerated traditionally for between 30 and 35 days to gain optimum flavour componants and tannins. Fermentation is monitored between 20 - 25°C and includes microoxygenation to further aid extraction of colour, tannin and flavour. Malolactic fermentation occurs in stainless steel vats. The resulting wine is aged on its fine lees for 2 months before bottling.
Food Pairings ,Excellent with roasted duck or fleshy fish such as huss or monkfish dishes.,"
